Life Gets in the Way

Things have been very busy recently, which has caused some radio silence on Mousekatots. Both of our jobs have been requiring some extra work so I have been too tired at the end of the day to do much of anything except to try to prop my eyes open to watch some TV.

But, last weekend we had a lot of fun going shopping and Lily was able to use her chore money to buy an Ariel doll that she had been eyeing up at the Disney Store. She was so proud!

Then, yesterday evening it was my mom’s birthday so we had a wonderful celebration full of dinner, cake and presents.

Friday

Since I have Fridays off it is usually spent at either the Library or doing things around the house. Since this past Friday was pretty rainy and gloomy we stayed home and put our hair in curlers, made “dino chips” and counted our coins to see if we had enough money to buy our Ariel doll.

 

Saturday

On Saturday we went to our favorite restaurant for breakfast, did shopping at the mall, including get Lily her Ariel doll and having fun in the Disney Store, tried a new Mediterranean restaurant and watched “Sing.”

 

Wednesday

Like I said earlier, Wednesday was my Mom’s birthday and we celebrated by going out for dinner, having cake and opening presents. Everyone had fun, but I think Lily enjoyed herself the most.

Ho-Ho-Oh-No

Several years in the past we have made homemade peppermint marshmallows. It has been fairly easy and they turn out really cute.

However, this year it was different.

It was cursed from the beginning and I ended up throwing away most of the marshmallows, sansĀ a few that I saved for Lily who loved them.

But let me start from the beginning.

The recipe that I used I have used in the past and it worked really well, so I don’t blame the recipe at all. The recipe from Ashley Marie can be foundĀ Ā here.

You start the recipe out by basically making a simple syrup by dissolving sugar into water on the stove.

You also have to grease your pan (13 x 9) and cover it with a mixture of powdered sugar and corn starch.

While you are making the syrup you will have to “bloom” your gelatin in cold water for 10 minutes. Once the 10 minutes is reached you add it to the syrup.

This is when everything started to take a turn.

Here is my PSA: use a pot bigger than you think you will need. It will bubble over. You will have all of this syrup spilling over the edges. You will end up scraping off burnt sugar for an hour.

So once I cleaned this mess up I got a bigger pot and it seemed to work out well, but I had lost a lot of my syrup and gelatin which I think is what resulted in the marshmallows being a giant fail.

After it is done boiling for about 15 minutes you have to let it cool to a lukewarm temperature. Given I was ready for this to be done with, I maybe didn’t let it cool completely that led to my next fail of the project.

Once it cools you add it to your mixer and adds the extracts to give it flavor and you whip it up until it is really thick and white.

Once it was thick enough, I poured it into the pan and had to let it cool overnight because it wasn’t solid enough.

Next came the part where Lily could get involved. Because there was so much hot and sticky liquids and stoves involved, she really couldn’t help with anything. So, when it came time to cut the shapes out of the marshmallows,Ā I wanted her to help.

We used small cookie cutters that I found at Target earlier this holiday season.

Lily helped by cutting out the shapes, she would hand them to me and I would dip them in powered sugar to prevent them from sticking together.

When she started cutting them, I noticed that the bottoms were still wet and not the right consistency. They were more like wet clumpy sugar. I ended up letting Lily cut some out and then threw the rest away.

To be honest they were pretty terrible. Lily loved them. I just couldn’t see having these floating in my hot chocolate so the rest ended up in the trash.

But most importantly Lily enjoyed cutting the shapes out and it gave us something to do this evening.

I will just remember to use a bigger pot and then all of this will be avoided.

Weekend Recap

We have started to shop for our upcoming trip and trying to snag some end of summer deals before they are all gone.

The day was started out at the place the furnished almost our entire home, Ikea. (When you are newlyweds living at home, you need to buy a bunch of stuff, Ikea is the place.)

We didn’t buy anything, but I did get to see the kitchen that I absolutely love.

I am in love with this kitchen. Although, I could never have glass cabinets. I couldn’t keep them neat enough.

 

Before we left we did get a few pretzels because Lily didn’t eat much breakfast so you know, the best thing to do is give her a carb.

But, it did provide me with this wonderful photo of the hubby as he said, “Look, I’m a boxer” as he shoved this portion of a pretzel in his mouth.

We did score some great bargains. (The Mousekatot is the one that got the most stuff, as usual.)

I wanted to do Disney Bounding with her outfits (where you take a lose interpretation of a Disney character and dress like that. For example, a white sparkly skirt with a pale blue shirt could be Cinderella.)

While I was shopping I was looking at different shorts and skirts on sale and I couldn’t help but see how much of a difference in size there is in toddler clothing.

*Pulls out soapbox*

Look, as everyone I am sure would agree there is such an issue with body image for girls and women. You are expected to be a certain size and that size should be the same across the board in all the different stores. However, this couldn’t be further from the truth.

Here is a pair of shorts and a skirt that are the exact same size.

Same size. Same store.

So if these sizes were for an older girl, maybe in her preteens, and she tries on the red shorts and they don’t fit and she starts to feel self-conscious because she thinks she went up a size. But, she isn’t mature enough to understand how sizing works in the fashion industry.

It just stinks that this size issue is happening in sizes 4T. That is outrageous!

*Steps off of soapbox and puts it away*

After shopping we went out to eat at Bucca di Beppo. We love it there because we can get a nice big, family style meal and we don’t have to worry about wasting food with Lily.

We ended our Saturday by doing our grocery shopping because we are just a bunch of crazy kids.

It appears that that time of year is now upon us.
